　　本研究白腹鯖魚片分別利用紫外線無照射 (A組) 、253nm (B組) 、185nm (C組) 以熱風乾燥50 ℃ 乾燥五小時製作鯖魚一夜干。大腸桿菌數、硫巴比妥酸反應物 (TBARS)、總揮發性鹽基態氮 (TVBN)、三甲胺態氮 (TMAN)、組織胺、物性及官能品評變化作為評估指標。大腸桿菌起始菌數為 ( log 6 CFU / g )，實驗結果顯示C組顯著優於各組於2.0小時後無檢出，B組與A組分別於3.5及4.0小時無檢出。A、B及C組樣品處理5小時後，TBARS值分別為0.74、0.91及1.05 MDA μg / g，B組TBARS值明顯高於其他樣品，但所有樣品TBARS值低

於1.1 MDA μg / g ； 樣品乾燥完成後，A、B及C組樣品之TVBN為21.15、23.74和22.38 mg N / 100 g以及TMAN值1.94、2.21和2.06 mg N / 100g。所有樣品TVBN及TMAN均低於25 mg N / 100 g 和 3 mg N / 100 g限量標準。經紫外線乾燥後之鯖魚一夜干樣品其組織胺含量明顯高於無照射組樣品，A、B及C組測試值分別為4.05、15.65及18.15 ppm，惟所有樣品組織胺含量均低於臨界值50 ppm。 所有一夜干樣品硬度及咀嚼性隨著乾燥時間增加，而彈性及內聚性隨著乾燥時間而降低。紫外線處理並不影響樣品質

地的表現，不同處理之樣品各項物性測試之間並無明顯差異。光譜式品評描述分析結果顯示所有一夜干樣品彈性、硬度、內聚性、咀嚼性皆無明顯差異，紫外線處理不會影響樣品官能品評的表現。紫外燈熱循環烘箱可以抑制鯖魚一夜干製作時微生物的汙染，並維持良好的食用品質。
